Ingredients
• Fat of choice (gras-fed butter, coconut oil, etc.) - 1.5
Tbsp

• Taco Seasoning Mix - 1 packet
|
• Cauliflower - 1/2 large or one small head, roughly
chopped
|
• Freshly Squeezed Lime Juice - 1 lime
|
Preparation:
1.
Place onion, carrot and garlic into
food processor and pulse until finely chopped.
2.
Warm fat in a large skillet and add
onion mixture. Salute over medium heat for 5 mins.
3.
In the meantime, pulse cauliflower in
the food processor until a rice-like consistency. You may need to do this in
batches.
4.
Add the cauliflower, tomatoes,
chicken stock, chillies and seasoning to the pan. Stir to combine, Bring to a
boil, then reduce heat and simmer for 10-15mins or until cauliflower is tender. |
